This is one of my FAVORITE recipes and you can make it SO many different wants including just substituting cauliflower in for your usual potato recipe! Give this one a try and see what you think!
Ingredients:
- 1 Large Head of Cauliflower
- 1 Oz Chicken Broth, Low Sodium
- 2 Cloves Garlic, Finely Minced
- 2 Tbsp Parmesan Cheese, Low Sodium
Directions:
- Place the Cauliflower in a steamer and steam to desired tenderness. Alternatively, if you don’t have a steamer, put about an inch of water in the bottom of a pot and put cauliflower in the. Cover and steam to desired tenderness. You want it to be pretty soft because you’re going to mash it!
- In a bowl, mash the Cauliflower with Garlic, Chicken Broth and Parmesan Cheese. You have some play here so use your taste buds- just be careful because it may change the calorie count and the sodium!
- Make sure to serve this warm and you may even fool some people into thinking it’s really potatoes! 😉
