Eat Like a (Healthy) Kindergartner!

Okay, so I know that my plate totally looks like a kindergartner’s, but I mean who ever really STOPPED loving chicken nuggets and tots, am I right?! It’s just that we grew up and it wasn’t acceptable anymore and it certainly wasn’t healthy to eat these things, so we gave them up. I wanted to bring back those favorites and help you pass them on, HEALTHILY, to a new generation! This beats the heck out of taking your little ones to Mickey D’s for what they consider chicken, know what I’m saying? Make it yourself, you know what’s in it and that’s going to mean a much healthier meal for you and your family.

Baked Chicken Nuggets

Ingredients

 

  • 1 lb Boneless, Skinless Chicken Breast
  • 6 Tbsp Whole Wheat Breadcrumbs (I like to use Italian)
  • 1/4 Cup Panko Breadcrumbs
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Paprika
  • 1/8 Tsp Pepper
  • 2 Tbsp Olive Oil
  • Olive Oil Spray

Directions

  1. Preheat oven to 425°F.
  2. Spray a baking sheet with olive oil spray.
  3. Cut chicken into bite-sized pieces.
  4. Combine garlic powder, paprika, pepper, and bread crumbs (whole wheat & panko) in a medium bowl and stir until well-combined.
  5. Put olive oil in a separate bowl.
  6. Dip the chicken into the oil, then into the breadcrumbs and place on the prepared baking sheet.
  7. Spray the top generously with olive oil spray then bake 8 – 10 minutes.
  8. Turn nuggets over then bake until cooked though, about 4 – 5 minutes.

Serves 4 with about 10 nuggets each for 200 calories per serving and 5g of fat.

Broccoli-Cauliflower Cheese Tots

Ingredients

  • 6 Oz Broccoli Florets
  • 6 Oz Cauliflower Florets
  • 1 Egg + 1 Egg White
  • 2/3 Cup Grated Cheddar Cheese (Reduced Fat Preferred)
  • 1/2 Cup Whole Wheat Breadcrumbs (I like Italian)
  • Salt & Pepper to Taste
  • Olive Oil Spray

Directions

Prepare Broccoli & Cauliflower
  1. Blanch broccoli & cauliflower in a pot of boiling water for 1 minute.
  2. Rinse under cold water and drain well.
  3. Wrap in a paper towel and gently squeeze out extra liquid, then let dry on a new paper towel.
  4. Finely chop the florets and set aside (You should have about 2 cups)
Prepare Tots
  1. Preheat oven to 400°F.
  2. Spray a nonstick baking sheet with olive oil spray.
  3. In a medium bowl, combine all of the ingredients (including cooked broccoli & cauliflower).
  4. Season with salt and pepper to taste.
  5. Spoon heaping tablespoons of mixture in your hands and roll into balls.
  6. Place on prepared baking sheet and bake for 16-18 minutes
  7. Turn halfway through and cook until golden brown.

Serves 4 with about 7 tots each for 150 calories per serving and 5.5g of fat.

For the blue cheese dressing, it’s not even that salad dressing is good for you, but it’s BETTER for you if you make it yourself! No preservatives, no artificial stuff- just the real deal! We use Alton Brown’s recipe but use fat-free sour cream and low-fat mayo from Trader Joe’s 😉
