This is where meal prep is really your best friend so if you aren’t yet convinced that it’s helpful, now’s the time! We grill up chicken each week so we have it available for all sorts of things all throughout the week like salads and stir-fries! You can just throw it on the barbie as is and season it as you use it, or you can marinate it in lemon juice or lime juice to make it super tender and then grill it. Either way, you’ll love having chicken ready for you!
I also use brown rice from Trader Joe’s found in the freezer section. It’s microwavable and makes everything SO easy! Pop in the microwave for 3 minutes and you have brown rice- highly recommend! It’s so easy!
Ingredients
- Pre-grilled chicken (1 Red Container)
- Cooked Brown Rice (1 Yellow Container)
- Edamame and Bell Peppers, or Use the Veggies You Have on Hand (1 Green Container)
- 1 Tbsp Sesame Oil (1 Spoon)
- 1 tsp Garlic Powder
- 1/4 tsp Cumin
- 1/2 Salt
- Dash Liquid Aminos or Coconut Aminos
Preparation
- In a medium skillet add sesame oil, garlic powder, cumin, and salt. Heat over medium high heat.
- When pan is heated, add veggies and cook for a few minutes, stirring frequently.
- Add pre-grilled chicken and cooked brown rice and stir in with veggies until completely heated throughout.
- Remove from heat and add a dash of liquid aminos- stir to combine.
- Serve immediately.
If you haven’t pre-cooked your chicken, just be sure to cook it in the pan first and then add the veggies.
