Beachbody’s Ultimate Reset: Day 19

Holy Guacamole! Day 19 already?! We’re on the last three days of the Reset! I’m still amazed and proud that we’ve made it this far, stuck really, really closely to the menu and have seen some great results! No weight change today , but after losing 8.5 pounds already, I’m really, truly okay with that!

So this morning, we definitely “cheated.” We had the Color Run 5k and, I’m sorry, but we just weren’t going to make it on fruit alone! So… we each had a Lara Bar- I love these things! They have like 4 ingredients, gluten-free, non-GMO- I could go on and on and on! But I digress… There’s never going to be a PERFECT time to start the Reset. We knew we had this 5k, but it wasn’t a timed event, it was for people of all ages and we knew we would be just fine to walk- which is totally allowed on the Reset.

We jogged to get off the starting line and then we jogged through each of the color station. It was definitely more exercise than I’ve gotten recently, but we made it through just fine! And it was a super fun event! If you guys have one in your area, I definitely recommend it. Even if you’re not a runner, you’ll feel totally comfortable doing this- you don’t have to run, you’re free to jog when you’d like and walking is definitely okay. Great day and great weather here in Seattle!

It was a perfect day to have something nice and hearty for lunch…. Hearty Vegetable Miso soup was on the menu. This is a recipe that we really like. It takes miso soup and kicks it up a notch with tons of veggies- you’ll really like this one!

Alkalinize definitely hit the spot today after our morning exertions! How odd to think about how I felt about this the first time we had it…..

Remember when I made the Mediterranean Roasted Beet “Chips”? Well, we got a second chance to roast the beets and not turn them into chips! These were much more tender and good in a different way than the earlier Roasted Beets were. Coconut Collard Greens (or in our case Spinach) were alongside and… Well, honestly, we were supposed to have Baked Tempeh with this, but if I never have tempeh again I’ll be happy girl! So we substituted Pinto Beans for the tempeh and we were both much happier! (I have a picture of this but my camera is acting a little funky so when I get it worked out, I’ll post the pic….. stay tuned!)

Wow- TWO days left! We’re on Day 20 tomorrow!! I’m excited to start the next part of our life where we incorporate what we’ve learned to live healthier lives overall! 🙂
