Beachbody’s Ultimate Reset: Day 12

I’m down another 0.1 pounds today… that brings my total weight loss to 6 pounds! That is a TON of weight for me and I am still kind of shocked. I woke up at 7 am today, on a Sunday no less, totally ready to get up and start the day! For someone who tends to sleep in quite a bit on the weekends- this is a really big thing for me! That’s even AFTER I did all that cleaning and cooking yesterday so it’s really quite a change. I know that a lot of it is because I’m sleeping so much more soundly and who couldn’t use that, right?

Delicious, delicious fruit again for breakfast. Same blend and variety as yesterday since we chopped up so much fruit in advance.

Lunch today is the Hearty Vegetable Miso Soup from dinner last night and microgreen salad. I’m sooooo glad I went ahead and made extra soup last night and also happy that I made salad for these next three days. I don’t have to stop and prepare lunch. If you’re like me, it’s hard enough to stop and prepare dinner so I’m all about making this easier! I am still really diggin’ this soup- I think this will be something we eat after this is all said and done for sure! And because it’s so delicious- it warranted another picture for sure! YUM!

I needed a snack today! There are a lot of options when you log into the Participant Portal and imagine my surprise and delight when I saw that peanut butter was on the list! OH heck yeah I had 1.5 Tbsp of that delicious stuff! Really helped me get through the afternoon. Most days are really good, but you know, some days you just need a little extra to get through.

Okay, so….. you’re probably wondering what the heck this even is, right? Well, feel free to laugh at me because I totally overcooked our beets tonight! BUT IT WAS OKAY!! Some pieces were nice and juicy and others were like a beet chip! It actually turned out really well! My suggestion though is make sure you cut the beets are uniformly as possible and really keep an eye on them. Anyway, this was Mediterranean Roast Beets and this is definitely an AWESOME recipe! I honestly haven’t eaten many beets so I didn’t know what to expect- the last time we made them on the Reset, it was accompanied by yams and carrots so I was concerned about just beets, but MAN these were good! A cup of quinoa is optional but I wanted it and it was delicious with the beets. Alongside was Coconut Collard Greens and these were also awesome!! You use coconut milk to cook these and Mmmm! We were saying that when this is over these greens would be AWESOME folded into an omelet! Just a head’s up Mediterranean Roast Beets are part of your lunch tomorrow so you may as well double up tonight and stick them in the fridge for tomorrow- you can even eat these warm or cold!

I cannot BELIEVE we’re already at Day 13 tomorrow! We have fewer days left than we’ve already been through which is a great feeling! It means the finish line to a challenge is just down the road and I am so proud of us!
