Day 4
I totally slept in today- it’s Saturday and my body just really needed it. I rarely sleep in so that was definitely a sign to me. I think things are really happening and even though I haven’t really worked out- I feel as though I have been. Annnnnd I’m down another half a pound!
DELICIOUS breakfast today! About 2 cups of fresh fruit, we had watermelon, banana, pear, kiwi, and strawberries. We also had a piece of whole grain toast and half a cup of organize yogurt sweetened with raw honey. I really liked having fruit for breakfast and I guess that’s a good thing because looking forward at the next two weeks, it looks like there’s a lot of fresh fruit on the breakfast menu!
I actually took advantage of it being Saturday and really relaxed. I took a nice long bath which is something recommended in the guide book- plus it’s something I really enjoy and don’t get to do often!
Unfortunately, lunch today was another roll like we had for dinner last night with the tempeh. If you haven’t read my review on this roll, make sure you check out Day 3. I ate it, but I wasn’t really thrilled about it. Though I’m glad I made the roll last night because otherwise, I’m not sure I would have wanted to eat it at all. Also for lunch is a lentil lime salad and microgreen salad. Honestly, there was no way I could even eat it all so I ate the roll and a little of each salad. Definitely haven’t been hungry during this!
We had our first REAL challenge today! Our friends were having a barbecue and we didn’t want to be anti-social so we put our willpower faces on and went for it. We walked over and usually this is a walk that’s kind of no big deal, but TODAY, oh my gosh! THIS is why they tell you not to work out. Your insides are doing all the working out! We were totally fatigued when we got there- it was pretty crazy. We also burned way more calories than usual by walking over there. Anyway, we knew we weren’t going to have a beer or eat burgers or potato salad so it was going to be tough. There was fruit so we each portioned out some fruit that would fit in our regimen. It was tough, but a good lesson- we can be there, be involved, and still have a good time even if we aren’t eating those usual barbecue foods. Oh, and we took a cab back- haha! 😉
Dinner tonight was my FAVORITE meal on the Reset yet! Stir fried veggies with quinoa! SO SO SO GOOD! We used sesame and coconut oil to grill up these veggies and I like my stir fry right on top of the grain, so this is a delicious bowl of veggies and quinoa. Plus, a little Liquid Aminos to season it up and it’s perfection! Okay, so honestly, this was supposed to have zucchini, but you guys remember how I accidentally cut up a zucchini instead of a cucumber so we didn’t have another. This was still FANTASTIC without the zucchini. Here’s another helpful hint: cut up double amount of veggies and store the extra in a baggy in the fridge because you’re going to eat this again tomorrow night! May as well make it easy on yourself! Also, cook extra quinoa for the quinoa salad you’re going to have both tomorrow and the next day!
So at the end of Day 4, I’m feeling much better about all this cooking. We’re getting better at planning ahead and cooking things ahead of time that we can. It’s all about looking ahead and getting everything ready. Tomorrow we’re going to shop for Week 2 and get any stray items we may need for the rest of Week 1. It’s going to be all out chopping and cooking fest tomorrow! Day 5 is looking fine…
