I pretty much eat breakfast any time of day- it’s probably my favorite meal! This is such an easy way to get a great meal that tastes DELISH and is totally 21 Day Fix approved! If you still have yellow containers left, feel free to add a piece of whole grain toast to this! Super yum and filling!
Ingredients
- Coconut Oil Cooking Spray
- 2 Eggs (Red Container)
- About 1 Cup of Broccoli (Green Container)
- 1 Tbsp Low Fat Shredded Cheddar Cheese (1/2 Blue Container)
- Garlic Powder
Preparation
- Spray non-stick pan with coconut oil cooking spray and heat over medium heat.
- Steam broccoli*
- Crack both eggs into a small bowl and add garlic powder.
- Whip up the eggs until combined.
- Pour eggs into prepared pan and cook, stirring constantly.
- Add broccoli after eggs are coming together.
- When eggs are almost cooked completely, add cheese and combine.
- Pour eggs onto the plate and serve immediately.
*An easy way to steam broccoli is to fill a mug with a small amount of water- just to coat the bottom of the mug- and add the broccoli. Then microwave the broccoli in the mug until it’s cooked how you desire.
