Day 6
It’s really crazy to think that we’re almost to the end of the first phase! As of today, my total weight loss is 3.5 pounds. I mean, here’s the thing, I’ve been eating SUPER clean, taking the supplements, drinking tons of water and, here’s the kicker, NOT working out. So for those of you who still think you can out-exercise a bad diet- let this be the nail in the coffin on that theory. Mondays are always a crazy busy day for me and this was my first Monday on the Reset so I was honestly a little bit anxious about it.
Especially when breakfast included… tempeh…
Now, we marinated the stuffing out of this tempeh yesterday and baked it up nice and crisp so it would have the best chance of tasting delicious as possible. So this morning, I popped it back into the oven to get it crisped up. I think we were actually supposed to have avocado slices with this, but I had guacamole so I made do and of course, the piece of whole grain toast (yeah…. I sorta burned mine today… oops). You know, I’m really sorry, but tempeh just ain’t mah thang. I tried and I really WANTED to like it, but fermented soy is just not doing it for me. In the book they said you can substitute beans in for the tempeh and we both agree that we’re going to be so much happier doing that, so I bid a not-so-fond farewell to tempeh… hopefully forever! Even with my bias, I still think you should try it because there are people who LOVE it, so don’t take my word as the end all be all- give tempeh a chance! (and then let me know what you think because if you like I’m dying to know about it!) Oh, and not pictured here, steamed kale went along with this meal!
I’m feeling much more productive today- even though it is Monday. I think this is definitely the best I’ve felt since I started the Reset which is a good sign- I think it’s just going to go up from here!
Lunch today was the quinoa salad you saw on Day 5 with tomatoes and cucumber, and then to go with that, some microgreen salad with dressing- and, yes, you guessed it- it was Creamy Garlic Dressing for us! I probably mentioned that I’m really not a big cucumber fan. I thought that maybe, by some miracle, I’d just magically start liking them while doing this reset, but it’s really not happening for me. There are a lot of recipes with cucumber though, so I’m going to have to figure out a replacement for it… or just suck it up, there’s only about two weeks left- I can do it!
Call me crazy, but I’m not hating Alkalinize today! The smell isn’t bothering me, the taste isn’t bothering me. In fact, it kind of just tastes a little bit salty I guess. Strange things are happening, I tell you! I thought that Alkalinize might do me in, but it’s actually really growing on me!
Mmmm… dinner tonight! Okay, so first of all we have the Roasted Root Medley which is yam, beets, carrots (and it would be onions but those I definitely don’t like) all roasted with some olive oil in the oven. Then there’s quinoa and you know me, I like my veggies with my grain so that’s why you see a bowl with both of those. You know what really got me about the root medley- it was SO sweet! I don’t know if that’s from me not eating sweets during this or what but it was crazy sweet!
Finally, and this is my FAVORITE part of the dinner- the Zucchini Cashew soup! OH EM GEE! This soup is soooo freakin’ good! And sooo easy, I mean it’s soaked cashews, steamed zucchini and Himalayan Salt to taste all blended up in the blender! We added some water because it was a little thick, but other than that- that’s it! By the way, tonight we just get half a serving of the soup and we get a whole serving tomorrow, so make extra soup tonight so you just have to warm it up tomorrow! This is definitely a soup that we will make again and again after the Reset is over!
So tomorrow is the last day of Phase 1– we’ve made it! This is the first time I’ve ever stuck so closely to something like this and I have tried all sorts of new recipes and foods so I’m really proud of myself! Going to get a good night’s sleep tonight which really hasn’t been hard during this!
